Carrot and apple muffins: heavenly and healthy

bunsThey look far too good to be healthy, right? They smell divine when they’re cooking too. And the taste? Well, not too sweet, but sweet enough. A lovely blend of spice and fruit. Nicely moist. I’m a massive fan, can you tell?

Of course, the best way for you to experience this heady mix of heavenly and healthy for yourself is to get on with it and follow this simple recipe.

Ingredients:

  • 1 1/2 cups of flour (plain flour, wholewheat flour, half and half…whatever)
  • 1 tsp bicarbonate of soda
  • 1 tsp baking powder
  • 1 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger
  • 75g brown sugar
  • 1 egg, slightly beaten
  • 3 tbsp rapeseed oil (probably any oil will do – although olive oil has a very strong taste…)
  • 1 tsp vanilla extract
  • 50ml skimmed milk
  • 1 grated apple
  • 1 cup grated carrots (squeeze out some of the moisture with your hands)
  • 100g raisins, sultanas, cranberries, nuts…whatever

Method:

  • set oven to 180 degrees and line a muffin tin with 12 paper muffin cases
  • mix all the dry ingredients (the first 7 on the list) in a large bowl
  • mix the wet ingredients – egg, oil, milk and vanilla essence – in a small bowl
  • add the carrot and apple to the wet mix
  • gently add the wet mix to the dry mix until just combined
  • add in the raisins or nuts or whatever you have decided upon
  • spoon mixture into the paper cases
  • bake for about 20-25 minutes
  • when cool, sprinkle with icing sugar
